These crispy nduma fritters are made with raw arrowroot, carrots, gram flour, onions, and herbs, then deep fried until beautifully golden and served with a flavorful homemade tomato dip.

Ingredients
  

For the Nduma Fritters

  • 2 medium-size raw nduma (arrowroots)
  • 4 medium-size carrots
  • 1 cup chopped green onion
  • 3 tbsps chopped cilantro (dhania)
  • 1 medium onion
  • 2 cups gram flour
  • Salt to taste (about 1 teaspoon)
  • Spices of choice (I worked with ½ tsp each of paprika & curry powder, & ⅓ tsp of black pepper)
  • Vegetable oil for deep frying

For the Dip/ Sauce

  • 1 medium onion
  • 3 medium to large tomatoes
  • 3 cloves garlic
  • Salt to taste
  • 1 tsp tomato paste
  • Spices of choice (I used 1/4 tsp each of paprika, curry powder, and black pepper)

Instructions
 

  • Prepare the Vegetables

    Peel and wash the nduma (arrowroot), then cut them into thin strips. Rinse lightly to remove excess starch.
    Peel the carrots and cut them into thin strips as well.
    Chop the green onions, cilantro, and onion, then set everything aside.
  • Prepare the Gram Flour Mixture

    In a large bowl, sieve the gram flour to remove any lumps.
    Add salt and your preferred spices, then gradually add room temperature water while mixing until a fairly stiff dough forms.
  • Mix in the Vegetables

    Add the prepared nduma, carrots, onions, cilantro, and green onions into the gram flour mixture.
    Mix thoroughly using your hands or a spoon until all the vegetables are evenly coated.
  • Fry the Fritters

    Heat vegetable oil in a deep frying pan over medium heat.
    Once hot, spoon tablespoons of the mixture carefully into the oil.
    Fry until the fritters are golden brown and cooked through on both sides.
    Transfer onto a paper-lined tray to remove excess oil.
    Repeat with the remaining mixture.
  • Prepare the Tomato Dip

    Chop the onion and tomatoes, then grate the garlic.
    Add them into a saucepan and place over medium heat.
    Once the mixture begins cooking, add salt, tomato paste if desired, and spices of choice.
    Cook on medium-low heat until softened.
    Mash the mixture lightly using a masher.
    Add about half a cup of water, stir, and bring to a boil.
    Lower the heat and allow the sauce to simmer for about 10 minutes.
    Give it a final stir before serving.
  • Serving Suggestions

    Serve these crispy fritters warm with the homemade tomato dip on the side.
