Pakora is an Indian dish consisting of pieces of vegetable or meat coated in spiced gram flour batter or dough and deep fried.

The mixed vegetable pakora that I’m sharing in today’s post is my vegan version of Pakora.

Our Version of Mixed Vegetable Pakora

I love gram flour recipes. This explains why when I came across Pakora and got to know how to make it, I had to develop a version of Pakora that had ingredients that were readily available in my part of the world.

My household relished this recipe. This is partly why I’m sharing the recipe here.

The carefully selected vegetables and spices blend together really beautifully to form a filling as well as a delicious pakora recipe.

The fact that it is satisfying and filling is the reason why you can have this recipe as a dinner or breakfast meal.

I also love this mixed vegetable pakora recipe because it serves my family’s dietary needs on days we want to eat a vegan meal.

Mixed Vegetable Pakora Recipe

This is a very easy-to-make homemade Mixed vegetable pakora recipe that's vegan-friendly and nutritious. The ingredients are easily available too. Accompanying this recipe is a step-by-step video tutorial guide that you'll find at the end of this recipe guide.

Equipment

  • 1 Deep frying pan
  • 1 knife
  • 1 Wooden Spoon
  • 1 Slotted Spoon
  • 1 Metal tray or platter
  • 1 chopping board

Ingredients
  

  • 2 cups gram flour
  • 1 tsp salt or as preferred
  • 1 medium size sweet potato
  • 3 medium size Irish potatoes (waru)
  • About ½ cup cilantro/ dhania when chopped
  • 1 cup spring onion when chopped
  • 1 large onion
  • About ¾ cup room temperature water
  • Spices of choice (I used ½ tsp each of paprika, black pepper, curry powder &turmeric powder)
  • Cooking oil for deep frying

Instructions
 

  • Step One
    Begin by Gathering the vegetables you need. Wash them thoroughly.
  • Step Two
    Chop the vegetables into small pieces. I like to especially chop up the potatoes in thin elongated pieces. They give the vegetable pakoras their characteristic delightful shapes.
  • Step Three
    Combine all the dry ingredients in a suitable bowl, that is, the gram flour, the spices, and the salt.
    Keep in mind that the bowl should be large enough to hold the gram flour dough and the vegetables.
    Add the water, a little at a time, and mix evenly to form a fairly stiff dough.
    *We’re working with a fairly stiff dough because vegetables will often release some water once they are chopped up. As you mix them into the dough, the dough will loosen up to the right consistency without being too runny.
  • Step Four
    Add the vegetables to the mixture.
    Using your hands, knead the mixture until the vegetables are evenly mixed into and covered with the dough.
    Meanwhile, begin heating up the oil on your stove or fire.
  • Step Five
    Start deep frying the pakora once the oil is hot but not smoking hot. Ensure that the oil is not warm either.
    I like to begin with deep frying a small piece of the pakora mixture. Once it turns a delightful golden color, I know that the oil is just hot enough and ready for us to fry the pakora pieces.
    Scoop a tablespoonful of the mixture and carefully slide it into the salad oil.
    Depending on the size of your pan, add a few more scoops, ensuring not to crowd the pieces into the salad oil. Let them have at least half an inch of space between them.
    Fry until the pakora pieces turn a golden color. Turn them over and fry to a golden color on the other side. This should take about 3 minutes on each side.
  • Step Six
    Transfer the mixed vegetable pakora pieces onto a suitable plate, tray or platter lined with paper towels to drain out any excess oil.
    Allow the pakoras to cool just a little but ensure to serve them while still as hot as you can handle them.
  • Mixed vegetable pakoras are often served with Chutney sauce as a dip. We like to serve our pakoras in herby mayonnaise. It tastes great too.
