Gluten-Free Cassava Drop Scones
Are you looking for an easy gluten-free drop scones recipe to enjoy for breakfast or as a snack? These gluten-free cassava drop scones are a simple homemade treat made with cassava flour, maize meal, eggs, and a few other basic ingredients. They are a lovely option if you’re exploring different ways to use cassava flour in your kitchen.
Cassava flour is a useful ingredient to experiment with when preparing gluten-free recipes. In this recipe, I’ve combined it with maize meal to make drop scones that are easy to prepare using ingredients you may already have at home. If you enjoy trying alternative flours or are looking for more ways to use cassava flour beyond your usual recipes, I hope you’ll enjoy giving these a try.
One thing I appreciate about drop scones is how straightforward they are to make. You don’t need an oven, and the preparation is simple. You mix the dry ingredients, add the wet ingredients, prepare your batter, and fry the drop scones in a pan on your stovetop. This makes them a practical option for homes where stovetop cooking is more convenient than oven baking.
I prepared these cassava drop scones for breakfast as part of a day in our home when we also made a delicious zucchini cake from a large zucchini we discovered growing in our garden. Since some of you have been asking for gluten-free recipes, I thought it would be a good opportunity to experiment with cassava flour and share the recipe here.
The ingredients are easy to find, and you can adjust the amount of milk slightly depending on the texture of your maize meal and cassava flour. The goal is to achieve a batter that you can easily scoop into the pan without it being too runny.
These drop scones are best enjoyed freshly prepared, whether you serve them for breakfast, with a cup of tea, or as a simple homemade snack. You can also serve them alongside other breakfast favourites, depending on what you have available at home.
If you enjoy budget-friendly homemade recipes and learning how to use familiar ingredients in new ways, this recipe is for you. I hope these gluten-free cassava drop scones inspire you to experiment with the ingredients you have and make something delicious for your family.

Let’s get cooking!

Gluten-Free Cassava Drop Scones Recipe
Equipment
- Mixing Bowl
- Measuring cups and spoons
- Whisk or mixing spoon
- frying pan
- Spatula
- Ladle or serving spoon
Ingredients
- 1 cup cassava flour
- 1 cup maize meal
- 4 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 eggs
- ½ cup milk adjusting as needed
- 2 tablespoons vegetable oil
- Additional vegetable oil for frying
Instructions
- Combine the dry ingredients. In a mixing bowl, add the cassava flour, maize meal, sugar, baking powder, baking soda, and salt. Mix thoroughly to distribute the ingredients evenly.
- Add the eggs and milk. Crack the eggs into the dry mixture, add the milk, and mix well until you have a thick, scoopable batter.
- Adjust the consistency. Add a little more milk if necessary, a small amount at a time. The batter should be thick enough to scoop into the pan without spreading excessively.
- Heat the pan. Place a frying pan over medium-low heat and add a little vegetable oil.
- Fry the drop scones. Scoop portions of batter into the pan, leaving some space between them. Cook until the undersides are golden and the tops begin to set.
- Flip and finish cooking. Turn the drop scones over and cook the other side until golden and cooked through. Keep the heat moderate so the outsides do not brown too quickly before the centres cook.
- Repeat. Continue with the remaining batter, adding a little more oil to the pan as needed.
- Serve. Enjoy the drop scones warm for breakfast or as a snack.

Notes
-
Milk: The amount needed may vary depending on the absorbency and texture of your flours. Add it gradually.
-
Maize meal: A finer maize meal will generally give a smoother texture than a coarse one.
-
Heat: Cook over moderate to low heat to help the centres cook through.
-
Gluten-free ingredients: Cassava flour and plain maize meal are naturally gluten-free, but check packaging and possible cross-contamination if preparing food for someone who must strictly avoid gluten.
