Easy Avocado Pasta Salad | Simple, Creamy & No Mayo Recipe
Equipment
- Cooking pot
- Strainer / colander
- Mixing Bowl
- Knife & chopping board
- Spoon or spatula
- Fork (for mashing avocado)
Ingredients
For the Pasta
- 200 grams pasta
- Water (for boiling)
- Salt (to taste)
Vegetables & Base
- 2 large avocados
- 2 medium tomatoes
- 1 medium Onion
- 1 large cucumber
- Some fresh cilantro/ dhania
- 2 cloves garlic
- 1 medium green pepper
Dressing
- Lemon juice of 1 juicy lemon
- 2 tbsps vegetable/ olive oil
- 1 tbsp honey
- 1 tsp 1 teaspoon salt (to taste)
- ⅓ tsp black pepper (to taste)
Instructions
- Boil the PastaBring water to a boil, add salt, then add your pasta. Cook until just tender—do not overcook.
- Drain and CoolDrain the pasta, rinse with clean water, drain again, and set aside to cool.
- Prepare the VegetablesChop the tomatoes, cucumber, and onion. Finely grate the garlic.
- Mash the AvocadoMash the avocado until smooth with a little texture.
- Make the DressingMix olive oil, lemon juice, honey, salt, and black pepper.
- Combine the BaseIn a bowl, add vegetables and garlic. Mix in avocado and dressing.
- Add the PastaAdd cooled pasta and gently mix until well combined.
- Serve or ChillServe immediately or chill for 30 minutes for best flavor.
