Craving a delicious, gluten-free treat but don’t have an oven? No worries! These no-oven, stovetop gluten-free cookies made with gram flour are the perfect solution. Why Gram Flour?

Gram flour, also known as Besan flour, is a versatile ingredient that’s gluten-free and packed with protein. It’s a popular choice for Indian cuisine but can also be used in various baked goods. In this recipe, gram flour adds a unique nutty and veggie flavor and helps bind the cookies together.

Why This Gluten-free Cookie Recipe with Gram Flour?

A friend recently requested me to develop and come up with more gluten-free recipes to cater for the dietary needs of a family member. This was after I had shared a few gluten-free recipes on our YouTube channel that you can find here. Here are a few of the gluten-free recipes I’d come up with and shared over there. Since she asked me, I’ve been developing more gluten-free recipes. I will definitely add them to the playlist above and on the blog right here. You can actually find another gluten-free cookie recipe blog right here.
I have also had guests who are gluten intolerant. This also inspired me to think of coming up with recipes that are gluten-free yet delightful such as cookies.

This is how this gluten-free gram flour cookie recipe came about. These gram flour cookies are delicious! I know you will love them too when you try this easy cookie recipe.

No-oven Baking

I bake my recipes mostly without an oven to demonstrate that with or without an oven, you can bake delightful recipes for you, your household, and your guests and enjoy. With a little God-given creativity, nothing should hinder you from baking recipes simply because you have no oven.
Also, if you come from the part of the world where I hail from, you know that there are large parts of our country where households do not own an oven. Being able to bake without an oven is therefore a skill worth acquiring. I’m glad I’m showing you how.
Our cookies with gram flour are no exception. You will enjoy your cookies baked without an oven as you will see.

What are the Ingredients that you will need to bake these gluten-free cookies?

Gram Flour:

You will need this nutritious protein-rich flour that you can find in most of our major supermarkets/ store outlets. You can also find it in select shops in our country where various grains/ cereals are sold and also milled.

Sugar

Sugar gives some taste to the cookies. You can reduce the sugar further or substitute it with honey or a healthy sweetener of choice.

Salt

To enjoy your cookies, don’t leave out the salt. Salt gives the cookies a delicious balanced taste that you will enjoy.

Milk or water

Milk will make your cookies healthier, softer too, and more nutritious. You won’t need lots of milk though. Milk helps to finish off the process of binding the ingredients together to get to a firm dough. You’ll need a few drops of milk.

Egg

An egg not only makes the recipe nutritious, but the result is often chewy tastier cookies with a touch of airiness which you will enjoy.

Cooking Oil

Any good quality healthy cooking oil will do. Cooking oil will contribute to the overall texture and flavor of the cookies that makes them so delicious.

Vanilla Flavoring:

As the name indicates, vanilla flavoring enhances the flavor and the taste of the cookies. I know of a friend who cannot stand the taste of vanilla. If that is the case with you too, if you don’t add vanilla, your cookies will turn out just fine. The taste of the rest of the blended ingredients will give you delightful cookies still.

How long can One Keep these No-oven Cookies?

I like to keep them in an airtight container and consume them within 3 days. They can last for up to a week if you refrigerate them.

No-Oven Stovetop Gluten-Free Cookies with Gram Flour: A Quick and Easy Treat

These are quick and easy gluten-free cookies, No oven required!
Learn how to make delicious, homemade gluten-free cookies using gram flour. This simple recipe requires no oven, making it perfect for those without one or who want a quick and easy treat. You will enjoy these!

Equipment

  • 2 mixing bowls
  • 1 Wooden Spoon
  • Measuring cups and spoons (If you don’t have these, improvise with cups and spoons closest in size)
  • A fairly heavy pan (I like to work with 2 pans to hasten the baking process)
  • Baking paper if not greasing pan or pans (If greasing, work with a tsp marge/ fat to grease pan and a little flour to dust)

Ingredients
  

  • 1 & ½ cups gram flour (besan flour)
  • ½ tsp baking soda
  • cup sugar (Or as preferred)
  • ¼ tsp salt
  • 1 egg
  • cup cooking oil
  • 1 tsp vanilla flavoring
  • A few drops of milk (About 2 teaspoons)

Instructions
 

  • Sieve the gram flour into a bowl, then add the sugar, baking soda, and salt. Mix with your wooden spoon until even. Set aside.
  • Add the egg, oil, and vanilla to a separate bowl. Mix with the wooden spoon until well mixed.
  • Gradually add the dry ingredients to the wet ingredients, mixing with the wooden spoon. As the dough begins to thicken, begin mixing the ingredients with your hands.
    Add a few drops of milk. (I mostly add up to 2 teaspoons of milk) Mix until the ingredients have come together. keep in mind the dough is gluten-free. It may not be stretchy like the dough with wheat flour. It’s usually just firm.
  • Divide the dough into small 18 to 20 balls about an inch in diameter each.
    I use two pans that are 10 to 11 inches in diameter to bake the cookies. The cookie pieces should fit in your pans so you can bake one time. If you have only one pan, bake the first set of cookies as I’ll explain below. When baking the next set of cookies, you won't have to grease the pan a second time if greasing, or use another baking paper. Simply arrange the next set of cookies in the pan and bake.
    If your pan is smaller in diameter, arrange the cookies in the pan and bake in batches until all are baked.
    Let’s now go to the how of baking without an oven on the stovetop.
  • Line the pan or pans you will use with baking paper, trimming the baking paper to ensure it fits well in the pans. In the absence of baking paper grease and dust the pans.
  • Arrange the cookies in the pan or pans, leaving room between the pieces to allow space for expansion. Lightly press each cookie piece with the tips of your fingers to flatten them slightly.
  • Cover the pan but ensure not to cover it too tightly to allow any steam formed during the baking process to escape. You don't want it to form droplets on your lid that drop on the cookies.
  • Transfer the pan to your gas stove or cooker. Light the burner and allow it on full flame for 30 seconds to heat up the pan.
    If you are baking them on one of your large surface burners, reduce the flame; not the lowest as designed by your manufacturer because that flame is still too high. It will burn the cookies before they get ready. Instead, reduce it as though you are switching off and get it to the lowest flame as shown in the picture below, (This can be troublesome to do as the flame may keep going off but keep at it until you get to the lowest, the kind that if you blew hard on it, it might just go off.
    This is the kind of flame that will bake your cookies for about 20 to 30 minutes or until they brown to a nice golden color on the underside.
    *If you are using the smallest burner, usually when you reduce to the lowest as the stove or cooker has been designed, this should bake your cookies without burning them since the surface area of the burner is very small. Ensure though to check on them to be sure they are not burning before they are ready now that gas stoves are different.
  • Check on them after 15 minutes. If they've browned, turn them over. If not, add another 5 minutes before turning them over until they've browned nicely.
  • Once you’ve turned them over, bake another 10 minutes on that low flame for them to brown on that part as well.
  • Transfer the cookies to a suitable plate or tray or let them cool on a wire rack.
  • Serve cooled with a suitable beverage and enjoy your cookies!

Don't Overcrowd the Pan:

Make sure to space the cookies apart to prevent them from sticking together.
