Groundnuts, or peanuts, are a delightful nut species that is found in many parts of the world.
These nutritious nuts are not only loaded with vitamins and minerals but also a source of protein, fat, and fiber.
The fact that these healthy nuts have lower levels of carbs makes them an excellent option for those who want to lose weight too.
I have a friend who keeps groundnuts on hand all the time.
She’s on a successful weight loss journey. The handful of groundnuts she keeps on hand, chewing on them throughout the day causes her to feel satisfied most hours of the day.
Peanuts, therefore, have multiple health benefits.
Prepping
I also love groundnuts because you can prep them by roasting them beforehand. You can then have them on hand when you need them.
I often batch-roast my peanuts. Once they’ve cooled down completely, I store them in an airtight jar or container.
Groundnuts are known to remain fresh this way for two to three months. I keep them for a month before I make a fresh batch.
Economic Benefit
I also find groundnuts cheaper in the part of the world where I come from as opposed to other nuts on the market.
They are also a very good source of income for those who plant, roast, and sell them.
Getting to know how to roast them is an invaluable skill because buying groundnuts already roasted means you will buy your peanuts at double or triple the price depending on where you purchase the roasted groundnuts.
Now that we are living in challenging economic times, in the part of the world where I hail from, buying your raw groundnuts or peanuts in the market is also a good bargain rather than purchasing them in the store or supermarket. They are way cheaper in the market.
Preparing Groundnuts from the Market
The peanuts from the market may still have a bit of debris as opposed to the store-bought ones. It will however not take you long to work on them so they are clean.
I will usually wash the groundnuts just before roasting them to rid them of any dust that usually accumulates on them while they are on display in the market

You Can Creatively Work with Peanuts
Roasted groundnuts or peanuts also form part of other delightful recipes such as granola. You can get creative in the kitchen as you work with your roasted groundnuts. That’s however, a topic for another day.
No Oven Roasted Groundnuts| Easy Stovetop Roasted Peanut Recipe with 2 Main Ingredients
Equipment
- fairly Heavy pan
- A wooden spoon
- Metal tray or platter
Ingredients
- 2 cups Raw Groundnuts
- ½ teaspoon Salt
- ⅛ cup Hot Water
Instructions
- If you are working with groundnuts that you’ve bought fromthe market, begin by selecting them, and picking out any debris, stones, dirt,or spoilt nuts. Wash them thoroughly.
- Begin by preheating a fairly heavy pan. As the pan is preheating, in a suitable small bowl, mix the salt and hot water until dissolved. Pour the mixture into the pan. Alternatively, you can pour both the salt and the water directly into the pan that’s heating up and gently swirl it around to dissolve the salt or stir with a wooden spoon until all the salt is dissolved in the water.
- As soon as the water begins to simmer, stir in the groundnuts and continue to mix with your wooden spoon until all the nuts are evenly covered with the salt water.Continue stirring the groundnuts on a high flame until all the water is gone. This means the groundnuts will be damp, not dry.
- Next, reduce the fire to medium to low heat.Continue stirring frequently for about 30 minutes or until when you shell a groundnut piece, the skin comes off easily. The length of time will also depend on your flame. The peanuts could take slightly less or longer than 30 minutes.
- Turn off your stove and continue stirring the groundnuts for a minute or two because the pan is still hot. Transfer the peanuts onto a metal tray or a large metal platter. Flatten the groundnuts out so they can cool. As they cool, they get even easier to shell as they get crunchy.Serve as preferred with a suitable beverage. In case you want to store them for future use, wait until they’ve cooled down completely. Store in an airtight jar or container and consume within 2 to 3 months.
