Cornbread pancakes are one of the easiest and most budget-friendly breakfasts. They’re filling, affordable, and perfect with a warm beverage.

Cornbread pancakes

Ingredients:

  • 1 cup maize meal (cornmeal)
  • 1 cup all-purpose flour
  • ¾ teaspoon salt
  • 4 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 2 eggs
  • 1 cup milk (or half milk and half water)
  • Cooking oil for frying

Instructions:

  1. In a large bowl, mix the dry ingredients (flour, maize meal, baking powder, baking soda, salt, and sugar).
  2. Create a well in the center and add the eggs and milk.
  3. Stir with a wooden spoon until you achieve a thick, smooth batter.
  4. Heat about 2 tablespoons of oil in a wide pan. Drop three separate scoops of batter into the pan, leaving space between each for easy flipping.
  5. Cook until golden brown on both sides, flipping carefully with a turner.
  6. Serve warm with honey, jam, butter, or your preferred beverage.

2. Skillet Potatoes with Vegetables

This hearty, nutritious, and affordable meal is perfect on its own or paired with eggs for extra protein.

Ingredients:

  • 7 medium potatoes (peeled and cubed)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • ⅓ teaspoon turmeric
  • 1 teaspoon curry powder
  • Salt to taste
  • 4 tablespoons cooking oil
  • 2 medium bell peppers, chopped
  • ½ cup chopped cilantro (dhania)

Instructions:

  1. Heat oil in a pan and sauté onions until tender.
  2. Add garlic and fry until fragrant, just starting to turn golden.
  3. Stir in turmeric, salt, and curry powder and cook for a minute.
  4. Add potatoes and fry for a few minutes before adding ¼ cup of water.
  5. Cover and let cook on low heat, stirring occasionally until tender but firm.
  6. Once the potatoes are tender, stir in bell peppers and cilantro.
  7. Serve hot, optionally with fried eggs.

3. French Toast with a Twist

This version of French toast includes a vegetable-infused egg mixture for extra nutrition and flavor.

  • 1 medium onion, chopped
  • 2 medium tomatoes, chopped (remove the inner pulpy part and set aside for another dish)
  • 1 medium green pepper, chopped
  • 3 tablespoons cilantro, chopped
  • Salt to taste (½ teaspoon or as preferred)
  • 5 eggs
  • Cooking oil for frying
  • Bread slices as needed

Instructions:

  1. Beat eggs in a bowl and add salt, onions, tomatoes, cilantro, and bell peppers. Mix well.
  2. Heat oil in a pan.
  3. Spread a generous layer of the egg mixture evenly on one side of each bread slice.
  4. Fry on medium heat until golden brown on the side with the egg mixture.
  5. Flip and cook the other side until lightly golden and crispy.
  6. Repeat with the remaining slices.
  7. Serve with tea, coffee, or your favorite dip.

4. Crispy Fried Arrowroot with Savory Dip

Deep-fried arrowroot brings a delightful texture and flavor to this traditional ingredient.

Tip: Boil arrowroots with salt first, freeze them in portions, and thaw overnight before frying for the best texture.

Ingredients:

For the Arrowroot:

  • 5 large pieces of boiled arrowroot
  • Cooking oil for deep frying

For the Dip:

  • 1 medium onion, chopped
  • 3-4 medium tomatoes, chopped
  • 1 tablespoon finely grated garlic
  • ⅓ teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon curry powder
  • Optional: ¼ teaspoon black pepper

Instructions:

  1. Cut thawed arrowroots into pieces and deep fry until crispy. Set aside.
  2. For the dip, add onions, garlic, tomatoes, and spices to a saucepan. Add 1-2 tablespoons of water.
  3. Cook until soft, then blend or mash.
  4. Add ½ cup of water and cook for 5 minutes.
  5. Serve crispy arrowroots with the dip.

5. Ugandan Rolex (Chapati and Egg Roll-Up)

This popular East African street food is a delicious and budget-friendly breakfast option.

Ingredients:

  • 1 medium onion, chopped
  • 2 medium tomatoes, chopped
  • 1 medium green pepper, chopped
  • 3 tablespoons cilantro, chopped
  • Salt to taste (½ teaspoon or as preferred)
  • 4 eggs
  • 4 tortillas or dry-fried chapatis (see bonus recipes below)
  • Cooking oil for frying

Instructions:

  1. Beat eggs, add vegetables and salt, and mix well.
  2. Heat oil in a pan and fry a portion of the egg mixture.
  3. Once the egg is partially set, place a tortilla/chapati on top. Let it cook for a minute before flipping.
  4. Flip and cook another minute or two.
  5. Roll and serve as a breakfast wrap.
  6. Repeat with the remaining tortillas/ chapatis.

Homemade Tortillas

Ingredients:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 tablespoons cooking oil
  • About ¾ cup room-temperature water (May vary)

Instructions:

  1. Mix flour, salt, and oil in a bowl.
  2. Gradually add water and knead into a soft dough.
  3. Cover and let it rest for 20 minutes.
  4. Knead for 5 minutes.
  5. Divide into 8 balls and roll out thin rounds.
  6. Cook on a dry pan for about 30 seconds to a minute per side until bubbles form.

Ingredients:

  • 2 cups hot water
  • 3 teaspoons sugar
  • ½ teaspoon salt
  • 5 cups all-purpose flour (May vary)
  • 2 tablespoons cooking oil

Instructions:

  1. Mix sugar and salt with hot water.
  2. Gradually add flour, mixing until warm enough to knead.
  3. Knead into a smooth dough and let rest for 30 minutes.
  4. Roll out entire dough to a thickness of a centimeter or thinner, apply oil on the surface, roll into a cylinder, and divide into 12 pieces.
  5. Roll the pieces into circles and cook on a dry pan for about 30 seconds to a minute per side until bubbles form.
