Easy No-Knead Bread Recipe (No Oven Needed!)
Equipment
- 1 Mixing Bowl
- 1 Wooden Spoon
- 1 fairly heavy saucepan with lid (About 7 inches in diameter)
- 1 Clean Kitchen Towel
- Measuring cups and spoons as needed
Ingredients
- 4 cups wheat flour (I like to use 2 cups all-purpose and 2 cups atta. (whole wheat) Feel free to use only all-purpose flour or only atta)
- ¼ cup sugar
- 1 & ¼ tsps. instant yeast
- 1 tsp. salt
- ⅓ cup vegetable oil
- 1 cup warm milk
- 1 cup warm water
- Egg wash for glazing (Optional)
- 1 tbsp. margarine or fat for greasing the pan (and a little flour for dusting)
Instructions
- Prepare the Dough Start by ensuring that your yeast is active. If you are unsure, proof it separately in warm water with a teaspoon of sugar and let it sit for about 5 minutes until foamy. In a large mixing bowl, combine the all-purpose flour and atta flour. Add the sugar and yeast, then mix them together. Add the salt last and mix. Make a well in the center of the dry ingredients and pour in the vegetable oil. Mix one cup of warm milk with one cup of warm water and pour in half of this liquid. Stir the mixture well. Continue adding the liquid while stirring to form a soft dough. There is no need to knead this dough—just mix until smooth and well-combined.
- Let the Dough RiseCover the bowl with a clean kitchen towel and allow it to rise for about an hour in a warm place. If the weather is cold or you are making this at night, create a microclimate by adding hot water in a small pan, covering the pan with a heavy kitchen towel folded double to reduce the impact of the heat, (We need the warmth, not the heat) and setting the dough bowl on top. Cover with a towel to retain warmth. After an hour, the dough should have doubled in size. If it hasn’t risen well, your yeast may not be active.
- Preparing the Cooking Pan Lightly grease your pan with margarine or fat. Dust the greased pan with a little flour to prevent sticking. Pour the dough into the pan and spread it evenly using the back of your hand, which has been dipped in flour to prevent sticking. Cover the pan with a lid and allow the dough to rise or proof for another 15-20 minutes.
- Cooking Without an OvenCover the pan and place it on full flame on your stovetop for 20 to 30 seconds to heat up the pan.If using the smallest burner on your stove, reduce the flame to the lowest setting.If using a wide burner, preheat for 20 seconds. Don’t reduce to the lowest setting. The lowest setting for a wide burner is too high. It will burn the bread before it’s ready. Instead, reduce the flame as though you are switching off and reduce to a very, very low flame as shown below.
- Cook for about 45 minutes, checking occasionally. If your stove doesn’t go very low, you may need to monitor it closely to prevent burning. Test for doneness by inserting a skewer or knife—if it comes out clean, the bread is ready.
- Browning the Top (Optional)Since the bread was not baked in an oven, the top will usually be pale when baked this way. To achieve a golden crust, carefully flip the bread onto a clean lid. Flip it again on another clean lid to get the pale part back up. Apply a thin layer of egg wash on this pale part. (Optional) Carefully slide the pan over the bread to flip the bread back into the pan so the pale part is now at the bottom of the pan. Cook uncovered for an additional 10 minutes on the low flame. The bread below is now browned on the surface.
- Enjoy Your Homemade Bread! Once the bread is ready, remove it from the pan and let it cool slightly.
- Slice and enjoy with your favorite spreads, soups, or as a side to any meal. Store leftovers in an airtight container to keep them fresh.
