Easy Gluten-Free Oatmeal Cookies Without an Oven
Equipment
- 1 Mixing Bowl
- 1 Wooden Spoon
- 1 Heavy-bottomed roti pan
- 1 or 2 11" pans for baking
- An assortment of measuring cups, spoons, and little bowls as needed.

- 2 cups traditional oats (to make homemade oatmeal flour)
- 1 cup corn flour (cornstarch) – This helps with binding and texture.
- ⅓ cup sugar – Adjust to taste.
- ⅛ tsp. salt – Enhances the flavor.
- ½ tsp. baking powder – Adds a light texture.
- 1 egg – Binds the ingredients together.
- ¼ cup vegetable oil – Any neutral oil will work.
- 1 tsp. vanilla extract/essence – Adds extra flavor.
- A little milk – For the perfect dough consistency.
Instructions
- Make Your Own Oatmeal FlourSince this is a gluten-free recipe, we’ll use homemade oatmeal flour instead of all-purpose flour.How to Make Oatmeal Flour Without a Blender/ GrinderThis method ensures a naturally gluten-free oatmeal flour that’s perfect for baking. Toast the oats: Heat a dry pan on medium-low heat and add the oats. Stir frequently for 6-7 minutes until they turn golden and aromatic. Grind the oats manually:If you don’t have a grinder, use a mortar and pestle to grind the oats a cup at a time, (or depending on the size of your mortar) until they reach a coarse flour texture.
- Mix the Dry Ingredients In a large mixing bowl, add the homemade oatmeal flour, corn flour, (cornstarch) sugar, salt, and baking powder .Mix well to combine all dry ingredients evenly.
- Add Wet Ingredients Create a well in the center of the dry ingredients. Add the egg, oil, and vanilla extract (optional but enhances flavor) Mix well using a wooden spoon.
- Form the DoughGradually add a few drops of milk while kneading with your hands. The dough should be not too hard, not too soft, just firm enough to hold its shape. Keep kneading until everything is well incorporated.Pro Tip: Since this is a gluten-free dough, it may feel different from regular wheat-based dough. Kneading with your hands helps you feel the right consistency.
- Shape the CookiesTake small portions of dough (about 1-inch balls). Flatten slightly to form round cookie shapes. Place them on a baking paper-lined pan or a greased pan if you don’t have parchment paper.Spacing Tip: Keep them slightly apart so they cook evenly.
- Bake Without an Oven (Stovetop Method)You don’t need an oven to bake these cookies! Follow these stovetop baking steps:Preheat the pan:Place the pan with cookies on the stove over medium-high heat for 20-30 seconds to heat the pan. If you are using one of the wide burners on your stove, reduce the flame to the smallest possible flame as shown below, reducing as though you're switching off until you get to this flame.But if you're using the tiniest burner, usually, if you reduce to the lowest as designed by your manufacturer, the flame will suffice because it's very small.
- Cover and bakeLet the cookies bake for 20 minutes. Since the top won’t brown evenly, flip them and bake for another 10 minutes.This method ensures even baking without an oven.
- Cool and Enjoy!Once the cookies are golden brown, remove them from the pan. Let them cool completely before eating. Enjoy their crispy yet soft texture with tea, coffee, or as a snack!
