Ingredients
- 2 cups whole maize meal flour (freshly milled for best results)
- 4 tbsps. tablespoons corn flour (cornstarch)
- ½ cup sugar (adjust to taste)
- 1 tsp. baking powder
- ½ tsp. bicarbonate of soda
- ½ tsp. salt
- 2 eggs 2 eggs
- ½ cup cooking oil
- 1 tsp. vanilla extract/essence
- ½ cup milk
Instructions
- Mix the Dry IngredientsTo start, take a medium-sized mixing bowl and combine the following dry ingredients: maize meal flour, corn flour, sugar, baking powder, bicarbonate of soda, saltUse a whisk or spoon to mix them well, ensuring an even distribution of all the dry ingredients. Once mixed, create a small well in the center of the mixture to prepare for the wet ingredients.
- Add the Wet IngredientsNow, add the following ingredients into the well: cooking oil, eggs, vanilla extract, half of the milk.Using a wooden spoon, start mixing everything together gently. One of the great things about maize flour is that it doesn’t form lumps easily, making the mixing process smooth and effortless.As you mix, slowly pour in the remaining milk. Continue stirring until you achieve a thick and well-combined batter.
- Prepare the Baking PanTo ensure the cake bakes evenly and does not stick, follow these steps: Use a fairly heavy baking pan for best results. If you want the cake to cook faster, use a wider pan. Instead of greasing the pan (which can be tricky with gluten-free cakes), line it with baking paper.Using baking paper is ideal because greasing with oil or butter might cause the cake to break apart due to the lack of gluten, which usually holds cakes together.
- Transfer the BatterTransfer the batter into the baking pan.
- Cook the Cake on a StovetopThis cake is prepared on a stovetop instead of an oven, making it accessible for anyone without a traditional oven. Here’s how: Place the lined baking pan on one of the small stovetop burners. Turn the heat to high for 20-30 seconds to preheat the pan, similar to preheating an oven. Reduce the flame to the lowest setting. If necessary, adjust until it’s just a small, steady flame. If you are using a wide burner, once you've preheated the pan, don't reduce to the lowest setting. This is still too high. It will burn your cake before it's ready. Instead, reduce the flame as though you are switching off and reduce to a very, very low flame as shown below. That's the flame that should bake your cake without an oven until it is ready.
- Cover the pan and let the cake bake for 45 minutes to 1 hour.If using a narrow pan, the cake may take about 1 hour and 15 minutes to fully cook.To check if it’s ready, insert a skewer or knife into the center. If it comes out clean, your cake is fully baked.
- Brown the Top (Optional)Since this cake is cooked on a stovetop, the top may remain pale. If you prefer a golden-brown top, follow these extra steps:Carefully lift the cake from the pan (Lift it up by lifting up the baking paper to keep the cake intact) and place it on a suitable plate.Turn the cake over and peel off the baking paper. Turn the cake so the pale side is facing up. Cover it with the baking paper.Invert the cake back into the pan by sliding the pan over the cake, then gently pushing it into the pan so that the pale top is now at the bottom.Return the cake to the very low flame. Bake for another 10-12 minutes on low heat to brown the surface.This step is optional, but it enhances the cake’s appearance.
