Gluten-Free Banana Oatmeal Cake (No Oven Needed)

Gluten-Free Banana Oatmeal Cake

If you have ever longed for a moist, sweet cake without using regular flour or an oven, then this gluten-free banana oatmeal cake is just what you need. It’s wholesome, simple, and perfect for those who want to enjoy dessert without worrying about gluten.

This recipe uses everyday ingredients like ripe bananas, oats, eggs, and oil—no grinder, no fancy equipment, and no oven required. Whether you are making it for breakfast, snack time, or a light dessert, this cake will be a delightful addition to your table.

Banana cakes are always a favorite in many homes, but this recipe takes it a step further by making it healthier and more accessible. Oats are naturally gluten-free and packed with fiber, making them an excellent substitute for wheat flour. When combined with ripe bananas, they create a moist, tender cake with natural sweetness.

Even better, you don’t need a grinder to prepare this version—you can easily crush roasted oats with a mortar and pestle. The result? A delicious, rustic texture that makes every bite satisfying.

The beauty of this gluten-free banana oatmeal cake is in its versatility. You can prepare it on your gas stove in a regular pan, which means anyone—whether you live in a dorm, a small apartment, or a home with limited baking equipment—can make it. No oven? No problem! This recipe proves that good cakes don’t have to be baked the traditional way.

And for those who love a little extra indulgence, the optional lemon glaze brings a tangy, sweet layer of flavor that pairs perfectly with the richness of bananas.

Children will love it, guests will ask for seconds, and you’ll enjoy how easy it is to prepare. This cake is proof that homemade gluten-free desserts don’t need to be complicated or expensive.

So, gather your oats and bananas, warm up your pan, and let’s get started on this healthy, oven-free treat. By the time you are done, you’ll have a cake that’s soft, crumbly, and absolutely delightful—one you’ll want to make again and again.

Equipment

  • mixing bowls
  • mortar & pestle (or grinder)
  • fork/masher
  • wide heavy pan with lid
  • Wooden Spoon
  • Spatula

Ingredients

  • 2 cups traditional oats
  • ½ cup sugar (or adjust to taste)
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • Pinch of salt (⅛ teaspoon)
  • 1 tsp vanilla flavoring
  • 2 eggs
  • ¼ cup vegetable oil
  • 3-4 medium ripe bananas
  • 1 tsp margarine/fat (for greasing)
  • A little flour (for dusting)

Optional Glaze:

  • Juice of one large lemon
  • 1 cup icing sugar

Instructions

  • Roast and crush the oats
Heat your pan on medium heat and roast the oats for 5–7 minutes until lightly browned and crisp. This enhances the flavor and makes crushing easier.
Transfer the oats to a mortar and pestle and crush until fairly smooth but slightly coarse. (You can also grind using a grinder)
  • Mix the dry ingredients
In a mixing bowl, combine the crushed oats, sugar, baking powder, bicarbonate of soda, and salt.
    Mix well and set aside.
  • Prepare the wet mixture
Mash the ripe bananas until smooth.
Add in eggs, vegetable oil, and vanilla flavoring. Mix until well combined.
  • Combine wet and dry ingredients
Add the oat mixture into the banana mixture. Stir until you have a smooth batter with no lumps.
  • Grease and prepare your pan
Grease a wide pan (10–11 inches) with marge and dust lightly with flour.
Pour in the batter and spread evenly.

  • Cook without an oven

Insert a skewer to check doneness—it should come out clean.
  • Flip carefully and cook the other side for another 10 minutes to brown.
  • Optional lemon glaze
Mix lemon juice with icing sugar to form a smooth glaze.
Spread between two cake layers or drizzle on top.
(You can also work with your preferred frosting.)
