  • 1 wooden spoon or spatula
  • 1 Mixing Bowl
  • 1 Colander or sieve (for draining pasta)

Ingredients
  

  • 1 packet spaghetti (400 grams)
  • 1 medium-sized onion, finely chopped
  • 2 medium-sized tomatoes, chopped   
  • 1 tsp grated fresh garlic
  • 1 tsp tomato paste (optional)
  • 3 to 4 tbsps cooking oil
  • 3 eggs (or up to 6 if desired)
  • ½ tsp paprika
  • ½ tsp curry powder
  • ¾ tsp mchuzi mix or stew seasoning
  • Salt to taste
  • Optional: Chopped cilantro (dhania) for garnish
  • Optional: Additional vegetables of your choice

Instructions
 

  • Boil the Spaghetti
    Begin by bringing a large pan of water to a boil.
    Once the water is hot, add a teaspoon of salt and your spaghetti. You can use the spaghetti whole or break it into smaller pieces for easier serving, especially if you have younger children.
    Bring the spaghetti to a simmer and let it cook on a low flame. I like to transfer the pan to a smaller burner and reduce the heat to the lowest setting to preserve energy and prevent the spaghetti from boiling over.
    Cooking time may vary depending on the brand, but usually it takes about 7–10 minutes. You’ll know it’s ready when the spaghetti is soft but still firm—not mushy.
    Once cooked, drain the water and rinse the spaghetti with room temperature water. This helps remove excess starch and prevents the noodles from sticking together.
    After rinsing, drain again and return the spaghetti to the pan. Keep it on the lowest flame setting to stay warm while you prepare the egg sauce.
  • Prepare the Egg Sauce
    In a separate pan, heat your cooking oil over medium heat.
    Add the chopped onion and sauté until soft and lightly golden. This step is key for building flavor in your easy egg spaghetti recipe.
    Once the onions are tender, add your grated garlic. Stir constantly to avoid burning, then add in the chopped tomatoes.
    Mix well so the tomatoes incorporate fully with the onion and garlic. Cover and reduce the heat to allow the mixture to cook for 2–3 minutes until the tomatoes soften.
    While the tomato mixture simmers, beat your eggs in a small bowl. You can use as many as 6 eggs depending on your preference and budget, but even 2–3 will work just fine.
  • Add Spices and Simmer
    Once the tomato mixture is soft and aromatic, add in your spices and seasoning.
    I used paprika, curry powder, and mchuzi mix (Stew seasoning), but feel free to use what you have on hand. Add salt to taste, keeping in mind that your spaghetti already has salt.
    At this stage, you can also add a teaspoon of tomato paste for a richer flavor, or simply use an extra tomato if you prefer a more natural base.
    Stir everything together and cover again. Let it cook on low heat for another 2 minutes to allow the spices to blend in.
  • Cook the Egg Mixture
    After your sauce is ready, reduce the heat to medium-low and gently pour in the beaten eggs.
    I like to add a splash of water to the egg bowl (around ⅛ cup), which keeps the eggs moist and helps them coat the spaghetti better later on.
    Let the eggs sit for about 30 seconds to a minute before stirring. Then, gently stir them into the tomato mixture until they are fully cooked through but still slightly moist. This moisture is what makes this easy egg spaghetti recipe so creamy and satisfying.
  • Combine with Spaghetti
    Once your egg sauce is ready, switch off the heat on the spaghetti and transfer it into the pan with the egg mixture.
    Gently stir to coat the spaghetti evenly. Make sure the spaghetti is fully covered in the egg sauce for the best flavor and texture.
