My family and I love coconut cake. I also love to make cakes budget-friendly while maintaining their flavorful goodness. It was a real fun adventure therefore to work on this stovetop coconut recipe without an oven and see it turn out as it did. It was delicious!
I first worked on it when one of my daughters requested a coconut cake for her birthday. If you love coconut, coconut cake will not disappoint. We were not disappointed one bit!
This stovetop coconut cake recipe is an affordable cake that can also be had for breakfast, tea time, a dessert, or as a snack, plus you won’t require a mixer or other expensive equipment to make this easy coconut cake. In short, it’s a cake you and your household will thoroughly enjoy.
Discovering no oven baking has been a blessing, not just for me but for many others who don’t have an oven, or their oven has broken down, or who just want to experiment with baking without an oven.
I honed in on this skill of baking without an oven several years ago. It’s come in handy now when my oven broke down a few months ago at the writing of this post. Getting someone to repair it isn’t easy in the part of the world I come from.
I’ve continued to enjoy baked goods done on my stovetop without a problem, including coconut cake without an oven.

The Best Stovetop Coconut Cake Recipe – No Oven Needed!
Equipment
- 2 mixing bowls
- 1 Wooden Spoon
- 2 fairly heavy 7-inch diameter pans (or one 10-inch diameter pan if baking one big cake)
- 1 tester or sharp knife
- Measuring cups and spoons as needed
Ingredients
- 3 cups all-purpose flour
- 4 tsps. baking powder
- ½ tsp. salt
- 1 cup sugar
- ¾ cup cooking oil
- 2 eggs (or 1 cup fresh milk + 1 tbsp. vinegar)
- 1 cup sour milk
- 1 cup coconut milk
- 1 tsp. 1 teaspoon vanilla extract
- 1 tsp. coconut extract
- ¾ cup desiccated coconut or coconut flakes
- 1 tbsp. margarine or butter (for greasing pans)
- A little flour (for dusting pans)
Instructions
- Prepare the Dry Ingredients:In a large mixing bowl, combine the flour, baking powder, salt, sugar, and desiccated coconut. Mix well and set aside.
- Prepare the Wet Ingredients:In a separate bowl, whisk together the cooking oil, eggs, sour milk, coconut milk, vanilla extract, and coconut extract. Stir until well combined.
- Mix the Batter:Gradually add the dry ingredients to the wet ingredients in two batches. Stir gently with a wooden spoon until everything is well incorporated. The batter may appear slightly rough due to the desiccated coconut, but this is normal.
- Prepare the Baking Pans:Grease two 7-inch (in diameter)fairly heavy saucepans with margarine or butter and lightly dust them with flour. Divide the batter evenly between the two pans.(Alternatively, if you want to bake it as one cake, use a 10-inch diameter pan)
- Cook on the Gas StovePlace them directly on the stove on the tiny burners and preheat on high heat for 20-30 seconds. Then reduce the flame to its lowest setting. If you are using the wider burners on your gas stove, do not reduce to the lowest setting. The lowest setting is too high. It will burn your cakes before they are ready., Rather, reduce the flame slowly as though you are switching the flame off and get the flame to a very, very low flame as shown in the picture below. That’s the flame that will bake your cake without burning until it is ready.
- Cook the cake for 45minutes to 1 hour.To check for doneness, insert a toothpick or skewer in the center; if it comes out clean, the cake is ready.If you are using the one-burner gas stove, repeat the process with the second cake.
- Brown the Top (Optional)If you prefer a golden-brown top, carefully invert the cake back into the pan. Cook for an additional 10 minutes on low heat. (You can also refer to the video tutorial at the end of this post for better guidance)
- Cool and DecorateOnce both cakes are fully cooked, allow them to cool completely before decorating. For an extra special touch, try a delicious no-mixer coconut cream cheese frosting! The recipe will be here soon where you tier the two cakes to form one large cake as shown.
