- Heavy pan or sufuria with lid
- Muffin tins
- Cupcake/ muffin liners
- Mixing bowls (2)
- Wooden spoon or whisk
- Baking Paper
- Toothpick or cake tester
- Spoon/ spatula
Ingredients
- 1 cup pumpkin purée (or mashed boiled pumpkin)
- 1 ½ cups all-purpose flour
- ½ cup sugar (adjust to taste)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- ½ tsp mixed spice
- ¼ tsp salt
- 2 eggs
- ½ cup vegetable oil
- 1 tsp vanilla flavoring
Instructions
- Prepare the Dry IngredientsIn a bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and mixed spice. Mix with a wooden spoon and set aside.
- Mix the Wet IngredientsIn another bowl, whisk the eggs, oil, vanilla, and pumpkin purée. If you don’t have a blender, mash your cooked pumpkin finely using a fork until smooth.
- Combine Wet & Dry MixturesAdd the dry ingredients into the wet ingredients and mix until a smooth batter forms. Pumpkin makes the batter come together quickly.
- Prepare the Muffin HoldersUse muffin tins and cupcake liners. Grease and dust the tins lightly to prevent sticking, especially if your liners are smaller than the tins.Place a layer of baking paper inside a heavy pan. Arrange the muffin tins inside. Arrange the liners in the tins.

- Fill the LinersScoop batter into each tin until about ¾ full. This ensures the muffins rise well without overflowing excessively.

- Set Up Your No-Oven Baking EnvironmentCover the pan and transfer it to the smallest burner on your gas stove.Preheat the pan for 30 seconds on high, then reduce to the lowest flame setting.
- Bake on the Gas StoveCover and bake for about 30 minutes on the lowest heat. Insert a toothpick to check doneness; if it comes out clean, the muffins are ready.
- Cool & EnjoyRemove gently from the muffin tins. Allow to cool slightly before serving. They are soft, fluffy, and perfect with tea.Optional add-ins: raisins, chocolate chips, or nuts.
