  • Cupcake/ muffin liners
  • Mixing bowls (2)
  • Wooden spoon or whisk

Ingredients
  

  • 1 cup pumpkin purée (or mashed boiled pumpkin)
  • 1 ½ cups all-purpose flour
  • ½ cup sugar (adjust to taste)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp mixed spice
  • ¼ tsp salt
  • 2 eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla flavoring

Instructions
 

  • Prepare the Dry Ingredients
    In a bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and mixed spice.
    Mix with a wooden spoon and set aside.
  • Mix the Wet Ingredients
    In another bowl, whisk the eggs, oil, vanilla, and pumpkin purée.
    If you don’t have a blender, mash your cooked pumpkin finely using a fork until smooth.
  • Combine Wet & Dry Mixtures
    Add the dry ingredients into the wet ingredients and mix until a smooth batter forms. Pumpkin makes the batter come together quickly.
  • Prepare the Muffin Holders
    Use muffin tins and cupcake liners. Grease and dust the tins lightly to prevent sticking, especially if your liners are smaller than the tins.
    Place a layer of baking paper inside a heavy pan. Arrange the muffin tins inside. Arrange the liners in the tins.

  • Fill the Liners
    Scoop batter into each tin until about ¾ full. This ensures the muffins rise well without overflowing excessively.

  • Set Up Your No-Oven Baking Environment
    Cover the pan and transfer it to the smallest burner on your gas stove.
    Preheat the pan for 30 seconds on high, then reduce to the lowest flame setting.
  • Bake on the Gas Stove
    Cover and bake for about 30 minutes on the lowest heat.
    Insert a toothpick to check doneness; if it comes out clean, the muffins are ready.
  • Cool & Enjoy
    Remove gently from the muffin tins.
    Allow to cool slightly before serving. They are soft, fluffy, and perfect with tea.
