Gluten-Free Banana Oatmeal Cake (No Oven Needed)
Equipment
- mixing bowls
- mortar & pestle (or grinder)
- fork/masher
- wide heavy pan with lid
- Wooden Spoon
- Spatula
Ingredients
- 2 cups traditional oats
- ½ cup sugar (or adjust to taste)
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- Pinch of salt (⅛ teaspoon)
- 1 tsp vanilla flavoring
- 2 eggs
- ¼ cup vegetable oil
- 3-4 medium ripe bananas
- 1 tsp margarine/fat (for greasing)
- A little flour (for dusting)
Optional Glaze:
- Juice of one large lemon
- 1 cup icing sugar
