Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 2 ½ tsps baking powder
  • ¼ tsp salt
  • ½ cup sugar1 egg
  • 1 egg
  • ½ cup vegetable oil
  • 1 ½ tsps vanilla extract or essence
  • cup ⅓ cup treacle
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 2 medium apples
  • Slightly more than ½ cup milk

For the Lemon Drizzle

  • Juice of 1 medium-sized juicy lemon
  • Icing sugar, as needed

Instructions
 

  • Combine the Dry Ingredients:
    In a large bowl, mix together your flour, sugar, salt, and baking powder.
    You can sift them for a lighter texture, but stirring with a wooden spoon works perfectly well — especially in a busy kitchen!
    Once mixed evenly, make a well in the center and set it aside.
  • Add the Wet Ingredients:
    Into the well, pour your egg, vegetable oil, and vanilla essence, and begin to combine.
    Gradually add milk, mixing continuously until you get a heavy but smooth batter — not runny. This thicker consistency helps the cake hold up well even with juicy apples inside.
  • Prepare the Spiced Apple Mixture:
    Peel and chop your apples into small pieces, removing the core and seeds.
    In another bowl, mix your treacle with cinnamon and mixed spice until well combined.
    Add the apple pieces and stir until they are evenly coated. Set aside.
  • Prepare the Pan:
    Grease your pan with about a teaspoon of margarine or fat, then dust lightly with flour. Tap out any excess.
    Divide your dough into three parts, making sure the third is slightly smaller than the first two.

    ·      Add the second large portion of dough and spread evenly to cover.

  • Bake on the Stovetop:
    Cover the pan and place it on the stove.
    Start with full flame for a few seconds to heat the pan, then reduce to the lowest possible flame —the kind that might go off if you blew hard on it!
    Let it bake slowly for about 45 minutes, checking occasionally.

  • Brown the Top: (Optional)
    The cake is ready when a skewer or knife inserted into the center comes out clean.
    If you prefer a golden top, carefully invert the cake using two lids — flip it onto the first lid, then again onto the second so that the bottom side faces up. Gently return it to the pan, sliding it in so the upper part is now at the bottom.

  • Leave it to brown for about 10 minutes, uncovered this time.
  • Make the Lemon Drizzle:
    Mix the juice of one lemon with icing sugar until smooth and slightly thick but pourable.
    Once the cake has cooled slightly, drizzle the glaze generously over the top. The tangy lemon perfectly balances the warm sweetness of the spiced apples.
