Easy Vegetable Stew Recipe with Carrots, Courgettes & Bell Peppers

This easy vegetable stew is packed with colorful vegetables, gentle spices, garlic, ginger, and a light savory sauce. It is simple, comforting, and perfect served with mukimu, rice, pilau, spaghetti, or chapati.

Ingredients
  

  • 6 medium carrots
  • 3 large bell peppers (red, grren, yellow)
  • 2 medium courgettes
  • 2 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, grated
  • Equal amount grated ginger
  • 5 tbsps vegetable oil
  • Salt to taste
  • ½ tsp paprika
  • ½ tsp curry powder
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch or corn flour
  • 3 tbsps chopped cilantro or dhania
  • cups water (plus a small amount for mixing in the corn starch to form a paste)

Instructions
 

  • Heat the vegetable oil in a large pan over medium heat. Fry the onion until tender and slightly golden.
  • Add the grated garlic and ginger. Fry gently until lightly golden and fragrant.
  • Stir in the chopped tomatoes and carrots. Cover and cook on slightly low heat for 3–5 minutes, stirring occasionally to help the tomatoes break down further.
  • Add the paprika, curry powder, salt, and soy sauce. Mix well and cook covered for another 3 minutes.
  • Stir in the courgettes and bell peppers. Add the water and mix well.
  • Cover, bring to a boil, and cook for about 5 minutes until the vegetables are tender but still vibrant.
  • In a small bowl, mix the cornstarch with a little water until smooth.
  • Pour the cornstarch mixture into the vegetables and stir well. Bring back to a gentle boil until the sauce slightly thickens.
  • Finish by stirring in the chopped cilantro or dhania.
  • Serve hot with mukimu, plain rice, pilau, spaghetti, or chapati.

Notes

  • Avoid overcooking the vegetables for the best texture.
  • You can add peas, mushrooms, or sweet corn for variation.
  • This stew reheats well and can be stored in the refrigerator for up to 3 days.
