Ingredients
  

  • 3-4 large sweet potatoes, cut into small pieces
  • ½ tsp paprika
  • ½ tsp curry powder
  • tsp black pepper
  • Salt to taste
  • 3 tbsps cooking oil
  • ½ cup water
  • 1 tbsp soy sauce

For the Lemon Garlic Dressing

  • 2 cloves garlic, finely grated
  • 2 tbsps cooking oil
  • 1 tsp honey
  • Juice of 1 medium lemon
  • tsp black pepper

Instructions
 

  • Prepare the Sweet Potatoes

    Wash the sweet potatoes thoroughly. Cut them into small, evenly sized pieces to ensure they cook uniformly.
    Place the sweet potatoes in the pan or skillet and add the paprika, curry powder, black pepper, salt, oil, and water. Toss well until all the pieces are evenly coated with the seasonings.
  • Cook the Sweet Potatoes

    Cover the pan and place it over high heat and bring to a boil/ simmer.
    Lower the heat to low and cook until the sweet potatoes are tender and the water has evaporated. Stir occasionally during cooking.
    The sweet potatoes should be soft on the inside and lightly browned in places.
  • Finish with Soy Sauce

    Add the soy sauce and stir well to coat the sweet potatoes evenly. Cover and switch off the heat. The residual heat will help distribute the flavor throughout the dish.
  • Prepare the Lemon Garlic Dressing

    While the sweet potatoes are cooking, combine the grated garlic, oil, honey, lemon juice, and black pepper in a small bowl.
    Whisk until well combined.
  • Serve

    Drizzle the lemon garlic dressing over the top and serve immediately.
    Alternatively, you can serve and drizzle on individual plates.
