  • Cupcake or muffin tins (7–9 cups per batch)
  • Cupcake liners
  • mixing bowls (1 large, 1 medium)
  • Whisk or wooden spoon
  • Baking paper (for lining pan)
  • Tablespoon (for portioning batter)

Ingredients
  

  • 2 cups all-purpose flour
  • cup sugar
  • 2 tsps baking powder
  • A pinch of salt
  • 3 eggs
  • cup vegetable oil
  • 1 tsp vanilla essence
  • 1 cup milk

(Optional lemon glaze)

  • Juice of 1–1½ medium lemons
  • 1 cup icing sugar

Instructions
 

  • Mix the Dry Ingredients
    In a medium bowl, combine flour, sugar, baking powder, and salt.
    Stir well with a wooden spoon until evenly mixed.
  • Mix the Wet Ingredients
    In another large bowl, whisk together eggs, oil, milk, and vanilla until smooth.
    If using a wooden spoon, add half the milk first to make mixing easier.
  • Combine Wet and Dry Ingredients
    Gradually add the dry ingredients into the wet mixture, stirring until you have a smooth, thick, and slightly runny batter.
  • Prepare Your Cupcake Setup
    Place the cupcake tins or silicone cups inside a heavy pan lined with baking paper and line them with liners. This acts like your “oven.”
    Using a tablespoon, scoop your cupcake batter into the tins, filling each one halfway or just slightly above half. This gives the cupcakes enough room to rise beautifully without spilling over during baking.
    Tip: If you don’t have large cupcake tins, you can use smaller ones or even heatproof silicone cups — just make sure they sit evenly inside your pan so the cupcakes cook uniformly.
  • Bake on the Gas Stove
    Place the pan on the smallest burner.
    Preheat for 20–30 seconds on medium-high, then reduce to the lowest flame. Cover and “bake” for about 25 minutes until cupcakes are firm and springy.

    Depending on your pan size, you may bake in batches. Each batch makes about 7 cupcakes, giving you around 21 total.
