- 1 & ½ cups cassava flour
- ⅓ cup sugar
- ½ tsp. baking soda
- ¼ tsp. salt
- 1 egg
- ⅓ cup vegetable oil
- 1 tsp. vanilla extract
- 1-2 tbsps. milk (as needed)
Mix the Dry IngredientsIn a bowl, stir together cassava flour, sugar, baking soda, and salt. Combine the Wet IngredientsIn a separate bowl, beat the egg with oil and vanilla extract. Bring the Dough TogetherAdd the dry mixture into the wet and stir. Once thick, knead by hand, adding milk a little at a time. Cassava flour is gluten-free, so the dough won’t feel stretchy—but it will come together into a soft, pliable dough. Shape the CookiesDivide the dough into 16 balls.Flatten them gently using your fingers or press with a fork to make ridges.Arrange the cookies in greased and dusted pans. (Or lined with baking paper)Cover the pans loosely.(If you have one pan, bake in turns. For the second batch, you won't need to grease and dust the pan again. Bake in the pan as is.) Prepare and Heat the Pan or Pans on the StoveIf Using the smallest Burner,Place the pan on one of your tiny burners on your stove and turn the heat to high for 30 seconds to preheat. Immediately reduce the flame to its lowest setting. If using a wide burner, Preheat for 20 seconds. Don’t reduce to the lowest setting. The lowest setting for a wide burner is too high. It will burn the cookies before they are ready. Instead, reduce the flame as though you are switching off and reduce to a very, very low flame as shown below. Bake the Cookies on the StoveLet the cookies bake for 20 minutes. Flip the CookiesFlip them, then cook for another 10 minutes until golden on both sides. Serve the CookiesPair your cookies with your favorite tea, coffee, milk, juice, as a dessert, or as is and enjoy!
