- 1 tsp baking powder
- ½ tsp salt or as preferred
- 1 small onion, finely chopped
- 3 tbsps fresh cilantro (dhania), finely chopped
- About ⅔ cup water (to form batter)

Boil the Eggs Bring a pot of water to a boil. For best results, add ½ teaspoon vinegar or a pinch of citric acid to prevent the eggs from cracking. Carefully add the eggs and cook for 10 minutes on low heat with the lid on. Drain and immediately transfer the eggs to cold water.This makes peeling easier. Peel and set aside. Prepare the Batter In a mixing bowl, combine gram flour, baking powder, and salt. Add chopped onion and cilantro.Slowly add water, stirring until you get a thick, smooth paste. (Approx. ⅔ cup water.) Coat the Eggs Gently dip each boiled egg into the batter until fully coated.Be careful not to break the eggs—they are tender once boiled. Fry the Egg Pakoras Heat oil in a pan. Test the temperature by dropping a small amount of batter—if it sizzles and browns quickly, the oil is ready. Carefully place the coated eggs into the hot oil. Fry on medium heat until golden brown on all sides (about 3–4 minutes). Remove and drain on a paper-lined plate.Transfer to a suitable plate. Enjoy. Don’t Waste the Batter!Drop spoonfuls of the leftover batter into the oil and fry until golden. These mini fritters make an extra crunchy snack.
