  • Fairly heavy 7-inch pan (or similar size)
  • Mixing bowls (2)
  • Wooden Spoon
  • Measuring cups and spoons as needed
  • Cake tester or sharp knife
  • Gas stove with a wide burner

Ingredients
  

For the Cake

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup sugar (use up to 1 cup for sweeter taste)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½ cup sour milk (or fresh milk mixed with 1 tbsp vinegar)
  • ½ cup vegetable oil
  • 1 tsp vanilla flavoring

For Frosting (optional)

  • 2 tbsps margarine or butter
  • cup unsweetened cocoa
  • 2 cups icing sugar
  • ¼ tsp salt
  • A few drops of vanilla flavoring
  • A few drops of milk

Instructions
 

  • Prepare the pan
    Grease and dust a 7-inch heavy pan with margarine and flour. Set aside.
  • Mix dry ingredients
    In a bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Mix wet ingredients
    In another bowl, whisk together eggs, oil, vanilla, and sour milk.
  • Combine
    Add the dry mixture to the wet mixture. Stir with a wooden spoon until smooth and thick (dropping consistency).
  • Transfer to pan
    Pour the batter into the prepared pan.
  • Bake on stovetop
    Place the pan on a wide burner and switch on.
    Heat for 20–30 seconds on full flame to preheat.
    After preheating the pan, reduce the gas knob slowly as if switching it off until you achieve a very tiny flame—this low flame will bake the cake gently without burning.”
  • Bake for 50–60 minutes.
    Check with a cake tester or sharp knife. If it comes out clean, the cake is ready

    Add half of the icing sugar–cocoa mixture and stir, adding more drops of milk as needed.
    Add the remaining dry mixture and beat until smooth, thick, and spreadable.
